Cornie Carbonation

Hi folks. Just a few more questions:

I syphon my fermented brew into a cornie and purge out the air. Do i then have to leave it 2 weeks or so to mature before carbonating?

When I carbonate the beer, do I pressurise to the required level then turn the gas off or do I leave the gas on?

If I want to carbonate 2 kegs at the same time, do I need a 'Y' velve of some sort or do I pressurise one then the other and then turn off the regulator (aka question no 1)

Im not interested in forced carbonation so the longer method answers would be really appreciated.

The way I do it Rich, which will probably slightly differ from others is to purge the corny, then gas to 20 psi and turn off the gas leaving the corny attached to the regulator. When passing over the next couple of weeks keep an eye on the regulator and gas to over 15psi.
 
Thats exactly the same way we do it but i keep it around 20 psi. Thought about a Y connector for gassing 2 kegs and decided to get a gas management board because if you dont have the same beer in 2 kegs you need to gas at different pressures.

I was just about to post the very same questions.

From what I've gathered you leave it at 15 to 20 (some people say 30) for a couple of weeks then turn it down to 3 to 6 psi for serving.
 
I think the longer you leave it the better your beer will taste
 
once the beer is gassed you could start drinking it there and then. Different beers you will find some best served young and some that get better with age. Im currently drinking (on a weekend only) SNPA we made 4 months ago
 
Doh! I probably wasn't making myself clear. It's too early!
Once I have legged my beer and purged the air out of the top, do I then have to leave it a couple of weeks to mature before beginning to carbonate?

Oh, just thought of another! What are the dimensions of a 5 gal Cornie?

I think Rich is asking about purging the air but leaving it for some length of time before adding any gas pressure, and I don't see why you should want to do that.

I don't like my beer fizzy, but mine gets a good blast of gas right after filling and then gets left for a month or so.


Edit: Cornies are just over 4 gals, 19 litres, and are about 25" high and 9" in diameter.

What, say if you wanted to keg a number of beers in preparation for a big party a couple of months ahead? Can you leave it before deciding to carbonate?
 
For maturing I would carbonate and drop the pressure down to 5-6psi after two weeks, then check every now and then that the pressure hasn't dropped.
If your leaving them for a specific date you'd have to try several pints a few days before the party ;) just to make sure there gassed right

Depends what you mean by “carbonate”, you don't have to put much pressure into your kegs right from the start but I certainly think you should put some pressure in.

Give it a blast at 20psi, turn the gas off, after a couple of days top it back up to 10psi because that original pressure will have gone by now, then after a week try to maintain it around 5psi.
