Hi all, I'm looking to do a chocolate and coffee/espresso stout brewed to 23L anyone successfully done this? If not the above was also thinking about a chocolate and orange stout instead. Any advice on how to go about either of these? My main base will be

•Coopers OS Stout
•Medium DME x2

I'm drinking a Coopers stout at the moment that I added two tsps of instant coffee (one of the barista ones) and two tsps of coca powder, they both bring a bitterness to the stout that I like. I used 1kg of Beer Enhancer, 100g of honey and 30g of Aurora hops given a 20m boil and the tea and hop bag added to the FV. It's got an old fashioned taste and feel to it that I just love.

Chocolate and orange is a bit of a challenge. Not sure how often it occurs in the Coopers Stout Kit Review section (it is a very long thread!).

I assume you are proposing to brew to 22-23L with the kit plus 2x 500g bags of Medium DME from Wilko (or others)?

If so, my suggestion is to steep 200g of Chocolate malt at 65-70C for 30 mins in about a litre of water, remove the grains, by bagging them or sieving them, boil the liquid and use it to wash out the can / dissolve the DME. Proceed as normal for a kit.

Then at the end, when you open the bottles, add a small drop of Cointreau to taste. Might sound a bit expensive, but I don't see that messing around with orange zest will give you much but grief.

Sadly, it is the orange oil that has all the flavour and that will be largely lost if you boil it. As there will be n million bacteria on the outside of an orange, I dont see any way of not boiling it.
 
My son in law just brewdog a porter with chocolate grain and a little bit of hops to bitter then he has added dryed orange peel will let you kow in a few weeks how it tasts
 
I've used orange zest as additions for a wheat beer kit and a dark ale kit (part of a winter spiced ale recipe) and you get quite a pronounced orange flavour even after boiling the zest with the water needed for the kit. Don't know how it would compete with the stout flavours, but definitely worth a try with a little chocolate malt.
 
How much orange zest would you use for say a 20-23 litre batch then hop monster?
 
I added 40g of orange zest which was about 4 good sized oranges finely grated. Remember to blanch the oranges in hot water first and then dry them with paper towel - this helps remove any wax from the skin. Good luck - should be a nice brew.
