Well my Cooper Wheat beer has been in the FV for 2 weeks now and yesterday I was taking a gravity reading.

The beer is clearing up nicely (maybe too much) but it is tasting a bit thin & weak. I have a feeling I have mis-calculated the water and may have 24 or so litres in there.

Is there anything I can do to lift this brew before I bottle it?

Cheers in advance.

How did you make the kit up? did you add enhancer or sugar ect?

Never done it myself but you could add some dry malt extract and then let that ferment out.. or just see what it is like primed..
What are your starting and ending gravity readings?

A dry hop for a few days or a hop tea might help
Copied from Clibit's guide for suggestions on hops

"Blonde/Summer Ales
If you want to create a light floral or fruity hoppiness in blonde/summer ale, look for hops of that nature - Goldings, First Gold, Styrian Bobek, Sterling, Motueka, Wakatu, Crystal, Willamette and Summer hops are all good gentle hop options. You can also hop lightly with more intense hops - Citra, Cascade, Centennial or Amarillo, for example."

Thanks guys.

My OG was 1.035 but after taking the reading I added some dissolved brewing suger.
All together I used 500g Wheat spray malt, 450g enhancer (2) then added 250g dissolved bs. Current gravity is 1.01 (after 2 weeks)

I might try adding some DME

Personally, I wouldn't mess with the recipe apart from following the above dry hop or hop tea advice.

After hopping, priming with DME would add a bit more body to the brew ...

... and at just under 4% ABV (after priming) it should make for a great session beer for the summer. :thumb:

You are right, it would be a good session beer for Summer, which is what I intended - all be it a bit stronger.

What hops would you add to a Wheat beer?

cheers

Edit: ah, just re-read terryM. Still not sure which hops would enhance that wheat/white beer taste.

All down to individual taste and here's a brilliant site to play with ...

https://www.hopunion.com/aroma-wheel/

... and after deciding what you want all you have to do is find it!! (Not always easy in deepest Lincolnshire!)

I like East Kent Goldings as a well known flavour/aroma.

Citra gets a great write up but I have yet to use it. (Conservative "Stick to what you know." syndrome!)

Enjoy! :thumb:

Dry hopped with Hallertau for around 4 days and bottled this at the weekend.

It smelled great, very like wheat beer (strange that :) ), and looked good too.
Its going to be weak (3.5 - 4%) but should be a great summer session beer if it lasts that long.
