Hi

Quick question - how long should a stout be left to condition properly in bottles (or a cornie, not decided where it's going yet as it's still in the FV). Clone book said ready to drink when carbonated(?!) but I'd imagine 4 weeks would be a good low estimate?

If left in a warm place it will condition in between a week and a fotnight. You then move to a colder environment for the beer to mature and improve. One week for every 10 gravity points is often quoted and it is generally good advice.

Perform scientific quality assurance sampling on a semi regular basis to judge when its ready. :whistle: I tend to try a beer after about 9-10 days in bottle. If its carbonation is enough then I move to the garage - if not I leave for a few more days. It also let you know how well it is progressing and if its good enough it is certainly old enough.
 
I second all that Dunfie says, however:
For my EverySecond Bitter which is my house brew - it is best young, one week in the warm then one week in the garage then :drink:
For my stout, I found it is still getting better when I drink the last bottle 6 months after it was made :eek: (Don't drink a lot of stout so not only could this be wrong but would explain why some bottles survive for 6 months)

Try it, if you like it drink it :drink: . Give some a bit more time, then try it and if you like it drink it :drink: Drink some more :drunk:
