Evening all,
I bottled my Coffee Wine tonight that started fermenting on the 19/09/2011. It stopped about 10 days ago so I added finings and left it to clear. It's had a consistent gravity since then so I decided to bottle it.

I made it using the following recipe for 1 Gallon:
4 Tbsp of whatever coffee was in the jar
1.50 kg sugar - I think it was this amount, it's been a while!
Juice of 1 lemon
yeast and nutrient

I got the recipe from here but something is telling me I added more than 1.25kg of Sugar. I think it was more like 1.50kg.
Anyway SG: 1126
FG: 1002
~16.8%

The bottles aren't filled much - suggest you move some of the wine around and have as many full bottles as you can. Probably leave a little for some immediate sampling!

I did and forgot to mention the taste. It's quite smooth, warming and has a bit of a bite. I drank the bottle at the front tonight with my mum and stepdad as they wanted to try it. Is there any reason why they need to be full?

Oxidation, air is bad for wine, you shouldn't fill them right up to the cap but you shouldn't be able to see any air space below those aluminium neck collars.

Then again, I get the impression that none of those pictured are going to be around for very long, so it's not going to be a major issue.

PS: You should also be able to see the grouting in the tiles behind them.

I made coffee wine this summer and can honestly say it is one of my best for flavour, colour and highest abv% I have done.

Mine is still in the dj, clear but conditioning. I used a lot of sugar, 1.50kg ish to start with then as it got down to 1000 I added 100kg of sugar 3 times. I think it is around 18%.I also added some liquid vanilla extract after stabilising, Making it taste just like tia maria!

You should be able to see right through it. Yours is the same colour as mine but not as clear. I fear it will start to kick out more sediment in the bottle. Dont worry too much if you are drinking it immediately but maybe next time leave it a bit longer in the DJ to clear more.

I plan on putting mine into small fancy bottles and using it at christmas for me mainly but also for christmas presents for one or two people (its a lovely christmasy drink I think)

Sane here suzie - i left my vannila pod in the whole time and re sugared 3 times too then added finings and finally a generous cup of rum too! Now awaiting bottling :thumb:

As an aside, I did our kitchen with that type of tile (but in blue), and it was much easier than I expected, even with the massive amounts of grout you need to fill all those gaps. And it looks pretty good.

The picture doesn't do it justice. It's really clear, in 'real life' you can quite easily see the grouting and everything else through it. :D

I'll move the wine around tonight and fill them right up.
