Just wondered if anyone knows the best way to attach 3/8 gas line to one of these? Ideally I'd like to change the barbs for John guest fittings, does anyone know what size the screw threads on the input and outputs?

Should be 1/4.
As for line, I just use clamps. All my kegs, even my sanke kegs are fitted with ball lock fittings. So I just have a short hose from the regulator to that manifold. Then 2 long hoses from that manifold to gray ball locks. When I'm not using one hose I keep the valve off to keep pressure off the line. Ball locks are also known to leak a bit over time so over a week or two you could end up with an empty tank. I kind of wish I had gotten a double regulator so I could long term force carb while serving other kegs on my taps.
 
I re read and are you asking which barb goes with which? From the regulator to the brass fitting. The valves go to the separate kegs.
