hi just wondered if some one could help me iv brewed some cider iv added tannin from 3 tea bags to 4.5 liters of apple juice and 16 oz of sugar it finninshed fermenting and iv transfered it in to a second dj and after a week i bottled it and primed the bottles for it to become fizzy and left it about 2 weeks now and i smelt it to see what it smelt like and it smelt sulfery so i tried it and it tasted sulfery but the other thing is it seems like it has got stronger than 8.7 persent

Hmmm. What sorta apple juice are you using?

I think you've got your self a brew and a half there.
The added sugar alone will give you 5% ABV, 3 T-bags is enough tannin for 24 litres!
It will be a long time maturing, but won't you have a cracking pint at the end.

i used 4.5 pure litres of apple juice from concentrate 3 tea bags for the tanning 16 oz of sugar.And yes it will be like rocket fuel

its not that i wont drink it mark i just want to no why it tastes like that

Maybe because it was fermented too warm etc i dont know about cider maybe Moley knows why

Just a thought, you're not confusing the smell and taste of carbon dioxide with that of sulphur dioxide?

I've always found that my TC smells and tastes of sulpher for a little while. Leaving it to mature in the bottles for a month or two sorts it out, I opened a bottle I'd forgotten about, it must be over a year old, it was really good, it seems the longer you leave TC, the better it gets

I'd add that IMO, a lot of "proper" cider (i.e not strongbow, magners or bulmers etc) can smell quite feety or cheesy anyway. I'm sure that's why Thatchers "Cheddar Valley" is called that, and has got nothing to do with where it comes from!

well it could be a carbon smell cos i have added sugar to make it fizzy

CO2 is odourless, IIRC

if it helps, my brew has gone a little bit pongy, but it's kind of a strong, yeasty smell - quite acidic. I think it's probably normal as it's not absolutely awful, just not "pleasant". From what I've read, turbo cider goes through this but mellows with ageing.

By Jove, you're right! Aparently it's odourless @ small concentrations but in large concentrations produces carbonic acid when in contact with mucus membranes, saliva etc :geek:

the bottle that i had open smelt abit funny but today i opened my other bottle and it had a different smell.it smelt a bit nicer than the other bottle so i think i will leave it for a month and then see how it turns out
