cider help please

ok so my ciders had a two weeks fermenting(poss 3, not sure) and my gravitys dropeds down from 1100 to about 1007 which is all great, umm but its still fermenting away...bad.. dont wont it to go any dryer so should i drop some campden tabs in to stop it?
Problem is i think it tastes a little yeasty still, what can i do?

I should point out that i didnt use campdens to kill off natural yeasts at start, and added abit of dried yeasts tooo.

recipe... 15liters apple juice ( fresh pressed)
2.5kg sugar (added lots by mistake, read 2.2oz as 2.2lbs)
2tsp yeast
3tsp nutriant
1tsp pectin
 
ok so having drunk several glasses of the stuff i find the taste interesting but quite drinkable :cheers:
SHOULD I drop in some campdent tabs was thinking the usual 1per/gallon?
 
It depends on whether you enjoy flat cider or do you want fizzy cider? if you enjoy flat cider then a campden tablet and some Potassium Sorbate will stop the brew and kill off the yeast. If you want fizzy cider then you will need t let it ferment to dryness then back sweeten using Splenda or some other non fermentable sweetner to your taste**. You will also need to prime the finished brew so when you put it in the bottles it will condition up and you will get the fizzy cider you want.

** One way to do this is to sweeten a litre of cider until you get it to your taste then multiply it up to match your batch sized and put that into the full batch. I find that about 6 Tablespoons of Splenda to 19L works out about right for me.
 
thxs, not keen on the back sweetening method, think im gonna just kill ferment.( besides if sg drops much more gonna get rocket fuel,have 13.5alc % at mo)
