Hi guys,
It's that time of year to think about brewing for sitting in front of the wood burner, morcame and wise on the telly and drinking a nice Christmas ale, so here's my recipe I'm planning to brew this weekend:


Christmas Brewski:

Batch size 18L

4kg Maris otter
450g wheat malt
450g 50L crystal
130g carared
48g roasted barley

30g hallertauer 60 mins
13g cascade 10 mins
13g cascade 5 mins

Wlp London yeast 1028

Additions:
2 cinnamon sticks 15 mins
30g dried ginger root 15 mins
1/4 grated nutmeg
500g honey 15 mins
Boil time 60 mins

Colour: 35.3 ebc
Ibu: 28.46
Abv: 6.16%
Og: 1.067
Fg: 1.020
Effi: 75% will probably be higher due to equipment. Expected abv:6.8%
 
Just bottled this brew, finished out at 6.8% , added some spice steeped vodka to bottling barrel, first thoughts slightly dry finish with a little ginger heat, no distinct cinnamon or nutmeg flavours coming through, very little hop flavours as expected for this type of beer.
Hopefully 10 weeks in the bottle will help.

I think the dryness is due to the honey.

Never mind , what other hobby gives you such returns ;) :cheers:

Hi,
Yes I have tested a couple ;-)
So my thoughts are ; a little heavy on the ginger and not enough cinnamon etc,
Using the honey 15 mins left in boil time has made it a little dry.

So next time I brew this I would, put honey straight in fermenter and up the cinnamon and reduce the ginger slightly, still a nice drop but not a session ale at 6.8%
