Hi All

Trying to create my first recipe after about a year of doing all grain. I have used other recipies as a guide and added things like the oats for mouth feel and tried to work out the right amount of coffee / chocolate. Any thoughts welcomed!!!

Efficiency: 58% (yeah I know its low but that's my setup)
Batch Size: 23 litres
Est OG: 1.046
IBUs : 38
EBC : 82.5
Est ABV : 4.2%
IBU/SG : 0.826

Grains

4.36 kg Pale Malt
0.80 kg Flaked Oats
0.51 kg Chocolate Malt
0.32 kg Torrified Wheat
0.24 kg Crystal Malt
0.23 kg Roasted Barley

Hops

43.44 g Northern Brewer - 90 mins

Additions

170 g Cocoa Powder - 15 mins in the boil
110 g Cold brew coffee - bottling bucket (0.5 litre total)

Yeast

I am thinking Danster Windsor simply because I have used this before in stout with great results.

I originally tried cocoa powder in my stout but you could taste it was the powder. For a better chocolate taste that will last use cocoa nibs in secondary. Soak em in a small bit of vodka first to release all those volatiles. I also put 60-70g of lactose in to bring out the flavour more. Yours might taste like a cappuchino tho. Mmmmmm might have to stick down another chic stout...

I just use chocolate malt and everyone seems to say, "Wow, is there chocolate in this?!"

In my latest cocoa Loca stout I added 100g if cocoa powder to the last 15mins of the boil. It's turned out amazing! No powdery taste and the chocolate is not too sweet or overpowering

I used 100g of cocoa powder aswell in the last 15 mins with 2 vanilla pods. And 2 months on there's still no taste of chocolate or vanilla

Its funny to hear the different outcomes people get from Cocoa powder...

Some people saying they get great results to people getting nothing...

I am going to use Green & Blacks Organic Cocoa Powder and see what mileage I get with it.

Just hoping the ingredients come in time! Brew day is Monday and they are being dispatched today via Parcelforce so its touch and go!

I am really stuck on how much to use... One guy said he dumped two tins in and got a slight chocolate profile... On the over hand I am worried about using too much and it being overwhelming.

To be honest I want the Coffee to be the stand out taste and the chocolate taste to be more subtle...

I used bournville cocoa powder and 100g gave no flavour at all. But have no idea what yours tastes like mate.

I think I might just chuck in both the tins I have which is something like 250g and see what happens :)

This whole brew is leap in the dark for me so might as well go all in :P
