Probably don't need to use all of them. As for malt..maris otter,pilsner,Munich,Vienna,cara,Amber, special B,Black,brown,lots of different crystals.
 
You could make a all challenger Bitter/ale or use 1/3rdof Ale malt, Vienna and Munich with challenger as the single hop again a little like a German style with Hell lager yeast if you have it.
Gives a malty ale style not to BJPC but what the hell.
A lot of these so called bittering hops are pleasant on their own I have done it with Admiral and the Ale turned out quite nice
 
Challenger is a great all round hop and I've used it on single hop brews for everything from super pale summer ales to Yorkshire bitters to stouts. Even used it as the bittering hop in punchy American IPA as well.
Don't bother using it as a dry hop though, works best in the kettle.
Very versatile and tasty hop.
 
I use Challenger as my Bittering hop, gives a smooth rounded bitterness suitable for UK ales.
Works as a late boil and dry hop aswell though, have an all Challenger red ale conditioning atm that got a bit of Challenger late boil and a modest dry hop.
Imo it is slightly fruity with the classic English floral/herby character and a subtle sort of arome/taste of how a summer pine forest smells, if that makes any sense...
 
Some great ideas! I think I may do a session/ordinary bitter and use at the start and hop stand. At the moment for this I think I may only have Lallemand London yeast.
