Ive managed to get my hands on 5kilos of flaked maize and am keen as to try a Classic American Pilsner, but ive got a few q's...

All of the recipes ive found have flaked maize in amounts from 20-30%, and 6 row barley, and thats it... Now, we cant get 6 row in NZ so whats going to be a good substitute? Just a normal Pilsner malt? Or should I use something with a bit more beef like Golden Promise??

Still unsure what sort of hop ill use, probably just a single 60 min addition of nugget seeing as its so nuetral, allthough I was also considering Amarillo or Columbus, but thatd probably be a bit much
 
CAP usually have between 20-30% 'corn' , and than whatever base malt you can get hold of . . . I've used continental pilsner malt in the past but will be changing to British Lager malt for cost reasons. . . . so whatever lager malt you can get will be fine . . . The real reason nitrogen free adjuncts were used in the past is no longer relevant today so it is purely a flavour thing.

Hop wise Traditionally Liberty and Centennial were used (they were the local hop), but any neutral noble hop will do . . . I've used Saaz in the past very successfully.

You want to be aiming for about 1.050 and 40-45 IBU Mashing around 64C to get a really crisp finish
 
Sweet cheers mate, heres what im thinking

3.425kg Weyermann Pilsner
1.25kg Flaked Maize
250g Global Munich (im a munich whore, have to have it in everything!)
125g CaraPils

FWH : 12g Columbus
15 : 10g Amarillo, 15g Centennial
FO : 15g Centennial

And yeast wise ill probably go for Wyeast 2124 Bohemiam lager as thats what I have in the fridge...
 
Isn't maize used in the UK version of Stella Artois? I know it's used in Carling as on their website they boast about the 'mouth watering corn aroma' :sick:

I'm currently drinking a sort of American Pale Ale with New Zealand hops made with 4 kilos of a Pilsener Malt mashed with a kilo of ALDI cornflakes ( I had been using polenta and that's fine, but a bugger to boil up and get to the right temperature for the mash, then clean up a big sticky pot afterwards, and I was in ALDI and a couple of boxes of flakes followed me home :D )

Guy at the home brew club last night mentioned that if it was bit cleaner and done with a lager yeast and different hops it would pass as a good CAP. It's got me thinking.
