Can I leave it in the FV?

Hi

I have a brew that has finished its initial fermentation (taken 2 weeks) but currently don't have enough bottles available to bottle it.

Can I leave it in the FV for a week or so whilst "freeing-up" some bottles?

I do . . . If you can get it somewhere cool its generally better as the yeast is less likely to breakdown/decompose

I don't know whether this applys to beer or not, but when making wine from grapes you can leave it for a max of 6 weeks before the yeast starts ingesting the dead cells and producing "off" flavours.
