I am fermenting a saison using a mixed culture, both sacc and Brett (I think). Primary fermentation finished about a week ago, gravity is low and not changing, but there are still pellicles on the beer. It's been in the fermenter for close to 4 weeks now, is it ok to bottle or should I wait for the pellicles to subside?

I'm worried about bottle bombs and over carbed beers which spray everywhere when opening, which has happened in the past when bottling beers which became infected.

Thanks.

I think I'd leave it another while. Mine was fermenting slowly for at least a couple of months after I added the brett.

I've read mixed things, Milk the Funk says some brett strains can ferment quickly, others require months and looking at other forums seems to echo this. I have no idea which brett strain this is.
