seriously mate its dead easy,

get 2 value kettles from either argos or tesco etc, dead easy to strip down there is a youtube vid
isolating valves from ebay etc.
insulation is key as it really cuts down on boil time.
I use 2 , 1 for HLT and 1 for boiling Wort with hops strainer fitted.
Might get another barel for grains storage to stop mice wintering in my grain!

Regarding your brewpack boiler , I really wouldn't bypass the thermostat, with the best will in the world it only takes a distraction and we all forget things. I would hate to hear you next post titled "Help my plastic boiler has melted!"
