Hello all!
I do like a cali common but have only ever brewed a part mash version a few years ago that was infected...
So,I've had a quick look round at recipes but there's no better place to get a tried and tested one than HERE!
I use dry yeast.
So...please post your favourite cali common recipe!

I was trying to perfect mine but I haven’t brewed one for quite a while.

85% pale
15% Munich I
10% crystal

35g Northern Brewer 60mins
15g Northern Brewer 15mins
15g Northern Brewer flameout

I have had a go at a few Cali common's over the last few years, and really a more hoppy bitter was the end result...so not being overly impressed I tried this one...try it yourself (?) , you will never be the same again !!! (maybe not in a good way.....but like everything it has to carry a pre-stupidity warning).

total water ; 26L
pre boil ; 22.5L
Post boil ; 19L

Malt;
BestMalz Red X ; 4kg
Vienna ; 1kg
Acid malt ; 100g

Hops.
Zeus ; 60min ; 10g
Apollo ; 30min ; 7g
Apollo ; 5min ; 15 g
Bitterness ; 41 ibu

Yeast ; Lallemand Kveik (voss) dried 11g. Fermented at 20-25 deg Celcius.

The malt by itself is inceradibly disctinctive with mellow yoffee notes, and lovely red colour. The punchy Apollo and zeus give a real american sharpness, and the dried Kveik a fruity note that is realy differnt to most yeast.

A very different beer to most "hoppy" bitter types that people push as Cali common.....

This is one I made recently and am now enjoying.
It's a scaled down Jon Finch recipe using Bohemian pilsener, light Munich and dark crystal malts, hopped with Hallertau Mittelfrue and fermented with MJ54.

This is the recipe I use and has become a favourite of mine, recently made a second batch replacing Nth Brewer with Pride of Ringwood hops. I do use the San Francisco Lager White labs yeast but you could use CML California Common dry yeast. Got a 40litre batch in the planning now.

I think next time I will use a combo of tettnang and northern brewer and caraaroma as the crystal malt. Also warm ferment 34/70 instead of cali common yeast.
 
4000g MO
800g Munich light
300g Crystal 45 L
50g Chocolate malt
20g Columbus @60m
20g Chinook @15m
20g Cascade @3m or flameout.
CML Cali Common yeast or MJ M54
OG1049
FG 1010
ABV 5.1%
IBU 44.5
SRM 12
 
My notes on my last Cali Common

Brew length 25L
2.5Kg pilsner
3.5Kg Pale malt
30g Carafa 2
500g Caramunich 1
300g Vienna

1058 OG (70% eff)
31IBU

Northern brewer 23g @ 60 min (Leaf)
Northern brewer 37g@ 15 min (Leaf)
Northern brewer 40g FO (Leaf)

Pitched 2 packets of rehydrated Mangrove Jacks M54 at 17C and cooled to 15C
 
Here is mine, I don't think it pulled up any trees but it was very drinkable, especially after a few months in the bottle.

3.75 kg otter
350g crystal
80g choc (for colour)


20g northern brewer @60
30g n brewer @30
30g n brewer @45

Yeast - cml cali common
