calculating grain bill & getting confused

Maybe there would be someone out there who could help me understand this grain bill calculation thing... I'd rather learn the basics in the old-fashioned way (aka kicking and screaming) without having to resort to computer programs. Rickthebrew kindly outlined my first bitter for me and I hope to get it going on Saturday. The recipe can be found here:

The recipe requires 5000g of malt assuming 75% efficiency. However, when I did some manual calculations, assuming 60% efficiency (to be on the safe side, this being my 1st brew I'd rather underestimate my efficiency) that's when I started losing the plot. Here's how my my calculations went (found the basics on another homebrew forum):

I'm shooting for 23 liters of about 1,048 wort. SG of 1,048 makes for about 12 Plato. Thus my wort will be 12% extract by weight.
-> 23 x 1,048 x 0,12 = about 2892g extract needed. For clarity's sake let's round that up to 2900g.

Now, if we assume that my efficiency was 60%, I'll have to divide 2900g by 0,6 right. That's 4830g, then. It baffles me, since Rick's recipe requires more grain even though the assumed efficiency is higher. Wot? My exact question is whether I have excluded some factor that I should have used or if I have done some other mistakes here? I also calculated the amount of grain needed for Rick's recipe as above and according to that only about 3860g of grain would be needed. My brain hurts.
 
Thanks Mark! Food for thought there... I guess I'll follow Rick's recipe and see what the yield will be like with the equipment I have and then merrily hobble along the path of the brew.
