I split the yeast into 8 bottles no problem, When I restarted the yeast it was very slow to start 48 hours. Really got going when added to the beer a nice head with some trub at first then a pancake of fresh looking yeast on top of a white head about 4 inches thick. My question is the yeast head did not go back into the beer but stayed on top. So should I stir the head daily back into the beer or leave it on top, also should I skim the head before I drop or bottle the beer? it seems strange to have a pancake head at the end of fermentation usually there is no head on other yeasts I have used. Regarding dropping would you drop into a secondary container and when would you drop it? Also if dropped early would you heat the secondary container? .I hope i'm not to boring
 
Yeah it does that, it is a true top cropping yeast. It will just hang and hang there. Check the gravity and give it a taste. If it's done just rack it as normal. Skim some off the top and store 100ml in the fridge and you can use it in your next brew if you do it within a week.

For the first time in a while i've got all 6 of my cornies full and i'm putting another 10 gallons of wort in the fermenter this Friday for bottle ageing :grin:
