I think the idea is that the more things are clean and sterile, the less chance you have of losing a brew. You could probably get away with just cleaning 7 or 8 out of 10 times, maybe even 9.

But that one lost brew would be a real downer - especially if you've spent 3hrs heating and mashing, another hour or so sparging, another couple of hours boiling...not to mention the ingredient and fuel costs down the pan.

Exactly! We have, at relatively miniscule cost, the ability to sterilise or at least sanitise to a very high degree, we have the technology to build exit-only environments, well my LHBS sells a bung and airlock, for about a quid...

The question should not be "Why do we?" more "Why on earth wouldn't you?"
