Not wanting to ask anyone to give away too much here but we are looking to install a 100L brewery later this year and are in the process of designing the building to house it, all under the smoke screen of needing a bigger garage. Now I am a novice so excuse the naiveness of the question but what are the advantages of having the ability to place one vessel above another and approximately how much space do you actually need. We have figured we will have one room about 2mtrs x 5mtrs but as the roof will have an apex we could install something in the loft space.
Lovely looking kit btw.

Its horses for courses really.

A three tier system allows the whole process to operate under gravity assuming the HLT is at the uppermost level with the mashtun on the middle level and the boil kettle on the lowest.

The problem though is getting enough head of pressure to turn a spinning sparge arm.

However I personally prefer to batch sparge rather than fly sparge as the level in the mashtun does not have to be monitored to ensure the mashtun does not overflow.

But again this has its down side as the air can get knocked out of the mash causing it to sink onto the mash filter causing a stuck sparge.

A space of 2 by 5 mtrs is plenty of room for most of the systems You see here on THBF as they probably have a footprint of around 60cm deep by 180cm wide.
