Evening all, so... a repeat of one I made last year that turned out alright
The stuff
15L Lidl vitafit red grape juice
2 x 440ml Lowicz blackcurrant syrup
1L strong tea (5 bag)
3kg Tate & Lyle granulated sugar
Youngs 500g dried elderberries
Youngs 30g French oak chips
5tsp Youngs super wine yeast compound
5tsp pectolase
Muslin bag
The how
Empty dried elderberries into a bowl and fill with boiling water, let soak for 30 mins
Make up 1L strong tea, let stew for 15 mins
Boil muslin bag in pan for 5 mins
Then..
Into a sanitised 27L FV (coopers)
Pour in 2L of the grape juice
Tip in the sugar
Pour in a kettleful of boiling water, stir until dissolved
Pour in rest of juice, and syrup
Pour in tea
Add oak chips
Pour in pectolase dissolved in a little warm water
Top up with cold tap water to 25L
Empty elderberries into muslin bag and secure on FV so it hangs into the FV without sinking to the bottom. Pour in elderberry juice.
Sprinkle on yeast
Temp about 22deg
SG 1.095
Est abv at SG 0.990 = 13.75%
