I came across this video of a guy in the U.S. Brewing a Irish stout, his set up and his natural way on camera make it very watchable
Take a look and see what you think, he also dose another video of the finished stout, seeing the finished beer in the glass it looks a damn good beer

I'll watch later but Guinness is basically 70% base grains, 20% Barley and 10% Roasted Barley, a suitable hop that brings the IBU to 40-50 and an ale yeast. It's a really simple recipe. I've a Guinness "clone" on atm, I love the stuff. What gives Guinness it's creamy head is Nitrogen along with the natural CO2.

My attempt at a HBC PP stout clone is basically just the Guinness receipe with 6% RB and 4% Choccy. It's lovely.

once you watch it take a look at the video where he has it in the glass, he says about nitrogen to add to the head etc but he just uses CO2 and its damn near perfect without the nitrogen to hold the head

It just gives it a chocolate flavour.

Tesco's have a Youngs Chocolate Stout 3 for a fiver atm, try them and see what you think and maybe compare them to a regular bottle of Guinness. The bottles will be put to good use I'm sure. If you like it then try brewing one.
