At the moment my weekends seem to be fully booked & I get home probably too late to comfortably get a full brew done in the evenings.
So I was wondering if I could split my brew over two days? I've heard of people mashing overnight, and finishing off the brew the following morning.
Currently I'm doing BIAB, & I was hoping I could do something like the following:
Day 1: Mash, hoik out the bag, let it drain. Cover the brew pot until...
Day 2: Boil & finish the brew.

My main concern would be leaving a pot of tasty wort sitting around for a day in a warm flat. Sure it's going to be boiled, but it still doesnt feel right. If some badies get in there, will they be able to create off flavours that would make their way into the final beer, or will the boil fix everything? Would it be worth chucking a camden tablet in after mashing just to be on the safe side?

Any thoughts? The alternative is sucking it up and just doing the whole brew in an evening... but its likely that I'd get tired, make mistakes & end up flooding the kitchen

It depends what you are mashing in?

I usually mash in a 60L cool box leave it over night then drain and sparge. This way you can get a mashing going when you come in and boil in the morning. I havnt seen any problems doing this, but the cool box is 'fairly' air tight and insualted further anyway so I am not worried about beasties finding their way in.

As you have said 'bag' I assume your boiling in the bag? Im not sure if there is much difference? But i am satisfied that my cool box is secure and tightyl sealed.

Cheers!!

Darcey, Im mashing and boiling in a 3.5g stainless steel pot doing 2gallon brews. I've got a lid which fits fairly well so I think I'll be finje.

MF good to know that its been done before, so I'll give it a try tonight - assuming my delivery of ingredients turns up today...
