hi, my BREWFERM DIABOLO is still fermenting after 13 days is this normal for a very strong beer , there is little bits of yeast sitting on the surface of the wort will this sink when it has finished frementing and there are litte bubbles on the surface and when i smell it , it goes right up my nose with a punch if you know what i mean

its down to 1010 now so if it the same tomorrow ill bottle it

tried my first bottle of diabolo 9 days i since it was bottled and wow already its the best thing iv brewed, such a great taste, its a shame in some ways its so strong , going to try and leave them now for a month so they taste even better

For future reference, I tend to leave my beer in the fermenter for a minimum of 2 weeks. If it is still fermenting, I would wait until the bubbles stop going through the air lock, and then give it a good 5 days extra. That way the yeast reabsorbs a good amount of off flavours and beer is generally more tasty, clean and satisfying.
