Have you got a photo of your mash tun and false bottom. there should be not be a problem with not being able to submerge the grains and having to add additional water.

In then end, I used this:

Pils - 11.11 pounds
CaraHell - 1.6 pounds
CaraBelge - 1.6 pounds
Oats - 1.6 pounds

Boil for 90 mins
.5oz Nelson Sauvin 60 min.
.7oz Nelson Sauvin 20 min.
.7oz Nelson Sauvin 10 min.
.7oz Nelson Sauvin 5 min.

I probably should have bumped up the later additions even more and done a 0 min addition because the hops added more bitterness than flavor and smell. I mean they still added flavor and smell just not as much as I'd hoped they would.

I tried to mash for 90 mins at 66 and then sparge for 20 at 75.

I can't stand by this recipe as it is more or less just made up and it's my first time brewing.

I don't have a photo of the false bottom outside of the mash tun, but here it is in the tun...

I can't remember if that is before or after I added the extra 9L of water. I think it was before.

It has a lot of dead space under it. I think like 8L of dead space. It's quite a bit.
 
That is alot of deadspace, although I have a coolbox mashtun and a copper manifold I am sure you could build it different. I am sure some brewers have the FALSE bottom lower than the ball valve and use copper tubing through a hole in the FALSE bottom. Does anyone do this?
 
Bad Beer Update:

I just racked to secondary.

My gravity reading is 1.032... I think. I got a brix reading of 8.5 and I get a brix of 2 with still water.
The OG reading had given a brix of 15.

This is the inside of the primary during the racking. Do you notice anything strange about that stuff floating on top?

The taste is pretty light with a lot of bitterness.

Any thoughts on this?
