So, wayheyyy!! It was my birthday earlier on this week and I got a load of homebrew stuff. So I'm just finished starting n apple and mango wine made from not from concentrate juice. I followed the basic recipie for a WOW, and here my brews are so far!

Yay, brewing stuff for your birthday present is excellent :D How do you find the balloon works as an airlock, might the brew not bubble up into it? Will it keep getting bigger and bigger? I can't find OH's drill to make myself some new water bottle FVs, but I do have some balloons...
 
That one is a cowboy job mate, partially to see if I could create something that's drinkable from stuff I could get at the supermarket! But I left plenty of head space in the FV for the initial bubbling up, and the balloon was only put on when the SG reached 1.034, so what you are seeing there is after its been topped up.
 
I'm in the process of making a apple and mango WOW so I'll be following this thread!

For some reason, during the fermenting, I seem to have all the sediment on top, in a dense foam sort of looking and it has been for about a week now. Out of my 4 non kit wines that I've made its the only one that has done this so it would be interesting to know if you get the same results.

Also, would you mind sharing your recipe. I made mine as per the orange WOW but replaced the orange juice for the apple and mango.
 
I did the same stevie, followed the wow recipe but used 1 carton of apple and 1 carton of mango. Mine has frothed up as well, creating a foamy skin on the top. From the other pics I've seen its nothing to worry about and should settle at the bottom eventually and become the sediment I think.
 
I thought mine had gone wrong! Fingers crossed it will all sink down soon then.

I used just 1L of apple and mango juice, instead of separate ones so it will be interesting to see if they end up much different.
 
Took another hydrometer tonight, 1.10 or there abouts, wont be long now!
 
How is the sediment looking? I left mine for a fair while as I was hoping all the sediment stuff would sink down, it never dis. I shook it and it broke up, some looked like it was sinking, but it all kept coming back to the top. In the end I racked it and was careful not to transfer the sediment. It was clearing quite quickly using Kwick Clear finnings, but as work sent me away I've haven't been able to check on it for a couple of days.
 
Yeah, I've been giving it a wee shake periodically, stopped it when I found the sg was that low though! Most of mine has sunk down to the bottom but occasionally bits end up at the top.

I notice you are using one of those stick on thermometers, how do they hold up to being washed?

Thanks! I've seen them and wondered how good they were. I'll be buying a few on your advice!

So, I added some finings on Monday 15/1 and it ended up pretty clear so I bottled it today. It's a bit weaker than I had imagined: the flavour, not the alcohol content. Its got a slightly bitter taste but is drinkable. I'm really pleased about how well it cleared though

Patience is a virtue it appears...... as after sitting on a shelf for two months the bitterness has almost completely gone, flavours have developed getting deeper and are rounding off. It's now very pleasant and drinkable, but I reckon it could do with another month in the bottle and would turn into a really very good wine indeed. I'm very pleasantly surprised and more than a little happy with this one now!
