You did the right thing! Although I leave the fermentation alone as much as possible, if the lid's coming off for dry hopping, I wouldn't miss the chance to take a sample into a test tube, put lid back on and leave the sample for while (let any fermentation odours disappear and bubbles to disperse). Then take a reading and a taste test.

It's too good an opportunity to miss, and tracking what's happening with the numbers and development of the taste is valuable experience.

Because osmotic shock kills about half the yeast in beer and it doesn't happen with water. I've just been listening to Jamil Zainisheff ranting about not hydrating on a podcast.

Please define `osmotic shock'.
The main reason I think it's all bo**ocks is that I've never noticed any difference in the vigour of a fermentation or how quickly the krausen appears or the quality of the finished beer using the two methods.

That's a fairly nice piece. Shows a dramatic difference in viability of dry yeast rehydrated with 33c water compared to dumping it straight into beer.

I dumped one batch. I now regret it. I had it in my head from the start that oxygen exposure had ruined it. It tasted bit funny so I dumped it after two weeks. I've just made a batch which was dry hopped for too long and has the same "off" flavour. It's just a little grassy and will fade. So had i left that batch for another while it would have been fine. Ill never be so quick in future to dump all that time effort and money.
 
Eggy smell is still present in both fermenters. The Drain is dealing with the problem right now. First failed brew. Chin up, brew on.

You've wasted what was almost certainly a good batch of beer. It's amazing what some bottle conditioning time will do to change the character of a beer.

Just smelling it made me want to vomit. Absolutely rancid stench that our lass could smell in the living room when I was in the utility room 2 rooms away. Only 2 gallons, not end of the world, got some new shiny kit to play with so that's keeping my spirits up.

Hope the new kit brings you better luck!
 
Currently got a Amarillo simcoe in FV which thankfully smells ok. Bottling this weekend so fingers crossed.
