Anyone have a really good effort at cloning this beer using an all grain method. Has to be my favourite at the minute and would love to come close to it. Williams Bros Joker IPA would also be good.

From what I understand Hop Bursting is the way to go with it. I have also read that the beer has Mosaic hops in it.
Also my recipe is just using what I have / could get hold of at the time / what I thought could make a nice beer :).

Hoping to brew this at the weekend. I've been putting it off for too long! :cheers:

Misc

Single step Infusion at 66°C for 90 Minutes.
Irish Moss into the boil 15mins
Fermented at 20°C with Safale US-05



It tastes good, orange peel with a nice bitterness. Its close, the colour is a bit too dark and maltyness is pretty much there. Brew Dog list the hops used as Citra, Simcoe and Mosaic. I put the Riwaka in to firstly experiment with it and because I could not get hold of Mosaic leaf hops. Its a crazy hop, so much flavor (too much for this brew or DPC).

In future I am thinking of:

Using just Citra, Simcoe and Mosaic (need to find where I can get Mosaic).
Using the Simcoe for the majority of the bittering
Reducing the bitterness to ~60-65IBU
Loads more late hops and dry hops (hop bursting)
Get a EBC of ~8.0 (reduce crystal malt)

Then I think I will have it!

Will add to this post when I have tried my alteration ideas, but first I need Mosaic hops and time!

I read that brewdog use "Hop Bursting" in this brew where there are no bittering hops added. Just a load of hops going in from around the 30 min mark and the bitterness utilised from that?

Dogfish head do the same. There's some weird physics science behind the hop cannon they use, extracts the hops differently. I think punk just uses bittering and then all dry hops.
