Single step Infusion at 66°C for 90 Minutes.

It tastes good, orange peel with a nice bitterness. Its close, the colour is a bit too dark and maltyness is pretty much there. Brew Dog list the hops used as Citra, Simcoe and Mosaic. I put the Riwaka in to firstly experiment with it and because I could not get hold of Mosaic leaf hops. Its a crazy hop, so much flavor (too much for this brew or DPC).
In future I am thinking of:
Using just Citra, Simcoe and Mosaic (need to find where I can get Mosaic).
Using the Simcoe for the majority of the bittering
Reducing the bitterness to ~60-65IBU
Loads more late hops and dry hops (hop bursting)
Get a EBC of ~8.0 (reduce crystal malt)
Then I think I will have it!
Will add to this post when I have tried my alteration ideas, but first I need Mosaic hops and time!
