Brett Saison low fg

Just taken a sample of a saison i'm brewing 1006 after one week! I used MJ French saison yeast that went crazy at 28c.
I'm planning on adding brett tomorrow but am worried if theres much left for the brett to munch on..
Any thoughts??
 
Just had a look brewers friend that I use and it turns out I forgot that I had a predicted fg of 1007..
I was planning on taking off the yeast at 1012 and adding the brett.
Note to self, start putting post it notes on your fv's with instructions:doh:
 
Don't worry there's still plenty there for the brett to eat, it can metabolise other compounds than sugars such as hop oils, fermentation by products, proteins etc. Orval add the brett at bottling and it has lots of brett character when aged.
Oh and I received those beers yesterday, thanks again mate. Really looking forward to trying them :hat:
 
It'll be fine. I've added brett to beers with French saison and still got a decent bit of flavour
 
That's good to hear guys, I've stopped panicking. Just pitched 90% of the lambicus into the saison and chucked the last bit into the flanders red ale that's sitting in the under stairs cupboard:thumb:
