Woke up early & couldn't get back to sleep, so I give you a loaf made from 500g white bread flour & 100g gram flour.

@Rodcx500z these have 2% spent Maris Otter. Does that help the rise or the retained crumb moisture? Does seem to make a difference.

To be honest i have never tried but, i should imagine it will help with moisture

Are you practicing for bake off or a village show?

Neither.. this all started 'cos of that blasted ninja outdoor oven, that I breify fancied and then thought why....? We were away at the time and I got to thinking, what could bake with what I had.
A steel fry pan. Which lead to a loaf, then a focaccha and now... Well poncey custard bolleaux.

Thanks to @Twostage. I have setup two new bakers with "one hour bread".

I wrote the recipe up in builders English and 2 mates are popping loafs out all over the place.

I think the swirly custard job, would do nicely as a bay and onion sharing loaf with a cheese and bacon filling?

I’ve got an Irish coffee table cook book and it has a cheese, ham, soda bread recipe which I fancy making so it will be like that.
