I have two five gallon barrels of cider that I think are ready. Stopped fermenting a few weeks ago.

The cider is clear, and it tasted good, even at this point.

My question is, should I rack it again or not. I can’t see any benefit.

I fermented it in those barrels with the idea that I could just bottle using the tap and a tube with a bottle filler on the end, then just discard what is left under the tap.

Has anybody done this? Would it work? Or would the sediment come through anyway?

Up to you, if its finished a few weeks it should be good and settled/clear already. As long as you bottle using those taps and dont move the tub around it should be fine.
People rack it off to get it off the bottom sediment, that way its easier to bottle without stirring up clouds of stuff. If you are not bothered about leaving a bit at the bottom i'd just bottle from that. Enjoy!
