Ingredients

CZARNA PORZECZKA (BLACKBERRY) POLISH SYRUP 440ml
2 KG Dextrose or Granulated Sugar
3.5L Water
1 Tsp Yeast Nutrient
1 Tsp Allinsons Dried Active Yeast

Now this is how I did it but you don't have to...

Place syrup in a pan and add 500ml water and bring to the boil.
Place once cool into your container/FV.
Next add 2kg! Yes 2kg sugar to the FV and stir til dissolved.
Now add your water around 3L, again give it a stir til thoroughly mixed.
Next check your abv potential or SG, I got a potential of 24-25%
Now add your yeast nutrient (not essential) but I always like to add it.
And lastly pitch your yeast.
Sit back and wait a week or 2 for your yeast to complete, rack it off/bottle and add a teaspoon of sugar per 1L bottle
 
Will the yeast be able to get upto that kind of alcohol level though, wont it turn out sweet or possibly stuck? :shock:

Yeast nutrient works a treat and the yeast is so far working well, bubbling like a trooper already :)

Bread yeast? - will that even get into double figures never mind pushing to 24% with a massive sugar dump at the start?

I don't know, I can't see this one working. And I'm pretty sure it's blackcurrant, and not bramble or blueberry.

I don't know, I can't see this one working. And I'm pretty sure it's blackcurrant, and not bramble or blueberry.

So far...working. Forgot to edit as didn't use the bread yeast in end, eventually found some proper youngs stuff.

As for the name, the polish guy said that's what it was, took his word for it, there always honest at sports direct :)
 
I would highly recommend you read posts called alco~coke and kilju
For information about pushing yeast as high as it will go!

As its not as easy as adding 2kg and expecting it to be 24%

The yeasties can only tolerate so much alcohol before it starts to kill them,
The only way to get above 20% is to use turbo yeast that are specially designed for making spirts as they taste bloody awful on their own!

With wine yeasts even the super strong u can get to 18% but that's adding 1kg and then over the next month adding 100g every few days as not to shock the yeast

But ok you gone ahead and done it already so I wish you the best of luck
Can I recommend you shake the demijohn every day for a week or so coZ ur going to find
That that much sugar falls out of solution and just sits on the bottom of ur demijohn and it helps the yeast if u mix it around! And you need to keep this baby warm, put ur electric blanket round it.. Put ur Christmas jumpers round it etc. you need it to be in the high 20s else this will take months to ferment out!

And I would seriously think about splitting this in half and adding another bottle of blackberry
You will get twice as much 12%wine not bad in anyone's book ;)


I don't mean to come across as a know it all, seriously I admire ppl pushing the boundaries

Turbo yeast used ;) bubbling well, gonna be a headache drink this one.
 
Youngs don't do a turbo yeast as far as I know...

Bread yeast 0-3%
Ale yeast 3-6%
Cider yeast 5-10%
Wine yeast 10-14%
Youngs super high wine (with method discribed before) 5-18%

Turbo yeast (alcotec with a carbon filter) 20-24%
 
might try this one while I'm waiting for the elderflowers to flower. But I'm tending to agree with second2none here, added that much sugar to a brew to push the % rarely makes a successful outcome (just an undrinkable headache). I make it up to about 12%. Did that with the Raspberryade recipe and I'm very pleased with the result.
