i have recreated my 'tower brewery black sugar brew'
i made one of these using a youngs kit and mollassas sugar. it was really nice and bitter with a suggestion of anisseed ( :? )
i made another using the same ingredients but it was quite different. i have wondered about this a lot.
after the rugby on saturday, and having finished a batch i prepared for the day my last remaining guest and i tried a bottle from the shed, i thought it should be just about ready. before i had a sip my friend said 'this is nice, more bitter' i had a sip and it was the black sugar brew!!! :party:
so i wondered some more and i think i have worked it out.
when i make my kits i disolve my sugar in boiling water from the kettle. last time i did it i put the pan on the heat and it came to a simmer. this is what i did with the original 'balck sugar brew'
so it is a question of method rather than ingredients.
i am bottling and brewing tonight and i am going to boil my sugar, just for a moment, and i hope i can recreate once again the lovely bitterness of this black sugar brew.
