Hi all!

Just a quickie. Getting back on the wagon :party: - I'm trying to do a liquoricy stout and hear black malt has overtones of this flavour. Is 1kg black malt too much for a 5 gal batch? Recipe is:

3kg dark liquid extract
0.5kg extra dark dry extract
0.25kg treacle
1kg black malt
0.2kg wheat malt
90g northdown @15 mins
liquorice stick
Danstar nottingham

Also, right, what's a good book to find answers to questions like this in?
 
1Kg of black malt in a 5 gallon batch is WAY TOO MUCH!!! . . . You won't get liquorice more like charcoal

Ideally you would be looking at around no more than 250g . . . Use other roasted malts to provide more colour if that doesn't give you enough (Chocolate and roast Barley) . . . If you want a quick drinking stout then look at the Carafa Special Malts, which are in a similar colour range to choc, roast barley and black malt, but are dehusked so the burnt character fades very quickly
 
Glad I asked :) I'll make up the difference with carafa 3 instead then, and maybe a little chocolate malt. Thanks
