How would I go about conditioning a larger, if I was to make it now so it would still taste as good in 3 months time? From what I can gather, if I was to brew it and stick it into a corny, the taste would have started to disappear by the time I came to drink it.

Cheers,

I brew them and then lager them near to 0C as I can get. I do that in a glass carboy but you can even do it right in the cornie if you want. It will taste fine after 3 months and even benefit from that cold aging.

That's news to me crofty! It goes off over that time even of you have purged any oxygen and force carbonated it? What sort of time do you have before it goes off?

I have had beers last 4 months before becoming abit stale but by that time there is very little left in the keg so that perhaps is the cause of the staling. It depends what form of yeast you are using. If you are using a lager yeast then traditionally you would give it 3-6 months @ ~0-5c. I have cold conditioned lagers for 5 weeks before kegging then give it the usual 1 week per .0010 OG points. Its better to lager in the primary or secondary FV as it gives further chance for any yeast to drop out. Nice clear beer in the keg that way!
