25g Saaz @ 80 degrees for around 10-15 minutes
1 pack of Danstar Saison yeast

I know! Neighbour drinks my Citra IPA, daughter drinks my plum porter, wife drinks my cider. At least they leave me with my brown ales, Belgian ales, and stout.
I would go with not a heavy hopped beer, Motueka single hop less than 30 IBU works fine with a curry.Personally I think NZ hops go best with a curry and I usually have anything in the medium hot range nearly always a lamb tikka dish.
Although I'm not normally a big spirits drinker, I think a dilute G&T is a really good match, and by analogy a beer with a bit more bitterness than the usual lagery suspects. Plus keg beers tend to be too gassy for curry IMO.
Bombay Dazzler, the Bundobust house beer, is a wheat beer spiced with ginger, cardamom and coriander, so that could be another route to go down.
Next weekend, I start this brew so have some questions for you:
What volume did you have in your FV?
Coriander seeds - heaped or level spoon?
Cardamom pods - split open or whole?

I’ve got measuring spoons and it was a flattish teaspoon, around 5ml.
I crushed the cardamom pods slightly.
