Yes this is true, sugar wasn't as refined back in the days. When using recipes from way back it is always advisable to use a hydrometer! At least you can control the end result.

I've never done a Banana wine before, this looks pretty easy and interesting, so will have to try it. Do you think a small amount of white concentrate would improve this, or maybe overpower it?

Currently brewing;

2 gallons wild English Autumn fruits red. (Elderberries, blackberries, crab apples)
1 Gallon Elderberry red. (Elderberries + half small bottle red concentrate)
1 gallon English Summer fruits. (Strawberries, raspberries, rose petals + half small bottle white concentrate)
40 pints Cooper's Australian Pale Ale.

Maturing. Pineapple & Coconut wine.
 
I havent used my hydrometer for ages and now use the formula--237.2g sugar per litre of brew which gives roughly 12% alcohol, this makes it easier for people to work out the sugar content who have odd sized fermenting vessels, Dave
 
I might be being a bit thick, but what quantity of wine does the recipe make?

I remember trying a friend's parents' banana wine (nicked, obviously) as a teen, it was excellent if memory serves me correctly. Be very keen to have a go at this as a step up form juice wines.
 
My late father used to make banana wine using dried bananas, it was rather good.
I'm guessing the recipe was an adaptation of CJJB's and he used to bulk age it for around a year I think.

Got a batch of this on the go yesterday. Do I now just leave it to clear or does in need racking at any point???

Now tropical wine sounds nice Andy, any chance of sharing the recipe and a step by step idiots guide? :wha: :lol:
