I work in a bakery department in a large well known supermarket. We use large blocks of yeast , it is like large blocks of cheese . My ? is could it be used in any type of brew, and if so what sort of quantities.

No though it is the same species as ale and wine yeast it won't give the right flavour profile. It will make a wine and beer bready IMHO.

Ale yeast is relatively cheap and can be reused in several brews. :thumb:
 
try it and see if you like the taste......

My bet is you wont.
 
The question was "could" it be used and the answer to that is yes. It would most likely taste like **** but it could be used.
 
I'm brewing Joe's Ancient Orange Mead at the minute which uses bread yeast in the 'traditional' recipe. It's still got some time left for conditioning but initial tasting has been promising.
Don't think I'd risk using it for beer though...
 
Think i may buy a wilko kit make it as per instructions but b4 i put the yeast in i will put 4 lts in a demi john n just use a very small amount in that . after i work out how much and weather it will mix in ok
