Is it safe to have one of these starters on the go in the same kitchen where I brew?
That would be a wonderful thing! There’s a little bit of wyeast weihenstephan somewhere in my starter. It’s also good to bake a couple of yeasted loves in the company of your starter while it’s in its infancy.
 
Day 2.
There's a few bubbles in mine.
Just give it a stir and don't worry 👍
Chop sticks are great for stirring..

Day 3
Started early this morning, don't worry about your timescale.
Hopefully you have some activity on your starter.
Mix your 60/60 flour and water. Add 60g of starter to it. This is now your new mother starter.
Pop a lid on the old one and out it in the fridge.
Leave your new one on the kitchen side👍

Ok day four
So we take our mother starter and tip approximately half into the spent starter jar.
We then add our 60/60 of flour and water to the mother and give her a good stir.

I believe it is customary to name your starter, so in memory of my late father in law who loved his bread (albeit white pappy bread), please say Hi to Billy.

We're a day or so ahead because I couldn't wait for Wednesday and wanted to do some research and get going.

This is Day 5. AM feed.
70g starter from day 4, plus 35g flour and 35g water.

By all accounts there are no hard and fast rules; Dont worry if it rises, dont worry if it smells of socks, dont worry if it doesn't rise, don't worry if it doesn't smell of socks. etc.

Billy wasn't doing so well earlier in the week, so I stuck him in the airing cupboard today whilst we went out for a 12 mile walk. This is the best I've seen him.

I'm very excited.

Have mother in a jar and Jeffrey in the fridge 🤣
Ok so Jeffrey (great name👌)is mother and in the fridge.. as long as you keep a fresh mother/Jeffrey going he/she will be just fine🤯🤯
I wanted this all to sound as simple as it is..
Sadly communication by the typed word is not one of my strong points🤦‍♂️🤣
 
I forgot to mention earlier that you will need a proving basket called a Banneton basket.
I'm guessing most won't have one. So you'll need to find something to make do.
Some kind of a bowl or tub that can be lined with a tea towel.

I don't think reading is mine 😂
So I have Jeffrey's mother in the fridge from day 3, a bubbling jar conditioning who may be Jeffrey; and 30g from today in a tub on the side in the kitchen - Adam. This thing is starting to multiply like Tribbles...
All names courtesy of my daughters😀
 
2 in one shot here- my mother, who I've decided to call Corona Fizzical, for obvious reasons, and my first AG SMASH, using MO and (delicious...!!!) Cascade....

Could you give us some idea of scale/size of these, and your Dutch Oven, please? Must be getting close to loaf construction now, if my starter's activity (doubled in 4 hrs.. ) is anything to go by...

The colander is right at the top of the size scale you'd need.
About a two litre tub size I'd guess
 
Day five
So again we pour about 2/3rds from the mother jar to the spent jar(may of said half yesterday but don't worry).
Add a 60/60g if flour and water(that's been boiled and cooled).
So to try and make things clear! We have two jars, one with old spent starter and the new freshly fed mother 👍
Think we're going to bake day seven if that's cool?👍
