back sweetening

quick question
I've got 4 gallons of various wines that I've finished but all are very dry more than i like I've never back sweetened so I was hoping one of you seasoned brewer's could help me out with the process I've already added potassium sorbate and 1 Camden tablet to each dj and yesterday added finnings any help would be welcome

The safest way is to add sweetener but i have in the past put one teaspoons of ordinary sugar in each bottle just before drinking and shaking the hell out of it not ideal but it does the job, in the end i got sick of doing it and just drank it i now prefer it less sweet.

cheers for the quick response chippy tea I was thinking about pouring some of the wine into a saucepan adding 100 grams of sugar to warm it till the sugars dissolved and return to the dj what do you think

I wouldn't to be honest you risk getting an infection and ruining it, give the teaspoon of sugar a go in a couple of bottles and see if its drinkable.

Did you take hydrometer readings of the finished wines that are too dry?

I like using sucralose powder because it's cheap, dissolves easily and there's little chance of restarting fermentation.

I did take hydrometer reading they were all around . 995 I think I'll do like you say chippy tea and use sucralose like scotte75 suggests thanks for the suggestions guy's big help

Try stopping the next around .1000 and see if that helps.

I tend to find an analagous fruit juice to whatever wine i'm making and sweeten by adding that. So blueberry juice for blueberry wine, or red grape juice for red wines like elderberry, sloe, and grape etc. White grape juice (when you can get your hands on it) for elderflower, birch, oak for example. You've still got to stabilise the wine first

I added a teaspoon of honey to all my bottles, but I ruined one bottle by adding to much, just add a teaspoon to each demijohn before bottling and give it a good shake as it settles on the bottom
