Autumn beer

Ok, for my first real post i thought I might ask about seasonal beer.

I've had a crack at 2 extract brews and Im thinking of practising my craft on extract whilst I save for all grain equipment, problem is the better one of these brews is a wheat. The wheat hasnt got anywhere near its best (4 weeks since bottling) and I know by the time its reached a good maturity it will be getting on for autumn. If i want a good beer for october/ november maybe this is the right time to start thinking about what I should brew.

Im thinking about a strong bitter along the lines of Fullers esb, any ideas about what might make a good autumn brew clone?

What are you guys brewing or thinking about brewing soon?

I'm planning at the moment and going to make when the weather behaves and goes back to normal for a bit (its been 25-27oC in my flat this week!):

Peanut Butter Porter - really excited about this but trying to work out how to go about it at the moment.

Maple Syrup Smoked Beer - again the process and qunatities is whats taking the effort.

Oak aged Stout - Had some white oak fingers soaking in a cheap bottle of scotch for about 9 months and i'm going to put them in secondary for a couple of months.

It's really annoying me as i've got a proper itch for brewing at the moment but i'm not going to risk it.

Yea I'm down to the last few bottles of a Hefeweissen I made in April and its not aging well at all. I found it was best 2 to 4 weeks after bottling although it was great from one week as it got body and fizz very quickly with the low flocculation of the yeast.
 
End of the month might have another Black Sheep Riggwelter for winter :cheers:

This would explain why it tasted drinkable early on and hasnt really done much since. It came out rather watery and sharp, I over did the orange peel and under did the wheat extract but all bottles will be supped in the next month or so.

Thanks for the advice, the main reason I ended up brewing is thanks to my Dad; I always remember him saying a beer should have 3 months in bottle. I guess he was talking about bitters and stouts looking back.
