I think its between 20c and 25c but going lower will not do any harm, the lowest my kitchen got at night last winter was 15c and they all finished.
 
I would say 18 -21c though I have a port in the garage which can't be getting much above 15-16c and is doing fine. High temps will lead to fusel alcohols and the associated off flavours and side effects. :nono: :nono:
 
There is some activity this morning in the stock pot where my elderberry's and blackberry's are at the moment without the use of a heater.

I'll leave it to ferment for about 7 days then strain it into a DJ. I'm quite impressed with the super wine yeast compound, thanks for the info fellas :thumb:
 
Glad it worked, I read about the Youngs compound in the forum so when i went out to buy all the stuff i needed to start making wine i made sure i got some, as i said above i have never used anything else and it always works, i always add 1 teaspoon of Nutrient to the DJ, its a bit belt and braces but at the price of a tub i think its worth it.
