Quick update on judging day..it may be slightly delayed as my local brewery has a beer festival on next weekend and I think I will be showing my support on the Friday night. Made the mistake of going Saturday afternoon last year and most of the good stuff had sold out.

Which book 2S?

Bavarian Helles: History, Brewing Techniques, Recipes. Good book, interesting read. I think it was about £9 from TMM, worth putting in your basket if you are buying stock from there.

I constructed a recipe using the "plain and simple" outline recipe in the book which hit the IBU indicated. I then put the hop schedule into Hop Control and it showed that the flavour profle was well below the style guide for Helles. So I increased the late and whirlpool hops which meant I was a few points over the recipe IBU but was a lot closer to the style. Useful tool.
