To celebrate the fact that we're getting older (30 this year!) we've planned a trip to eastern Europe in July with a beer to complement the trip. Pilot Light Pale is a rapid departure from our IIPA/BLIPA/IPA brewing roots so would welcome discussion around this recipe.

Brew Method: All Grain
Style Name: American Pale Ale
Boil Time: 60 min
Batch Size: 17 liters (fermentor volume)
Boil Size: 19 liters
Boil Gravity: 1.057
Efficiency: 70% (brew house)

STATS:
Original Gravity: 1.064
Final Gravity: 1.014
ABV (standard): 6.46%
IBU (tinseth): 75.51
SRM (morey): 7.9

FERMENTABLES:
3 kg - German - Pilsner (60%)
1.5 kg - Torrified Wheat (30%)
0.25 kg - German - Carapils (5%)
0.25 kg - United Kingdom - Crystal 60L (5%)

HOPS:
20 g - Mosaic, Type: Pellet, AA: 11.7, Use: Boil for 60 min, IBU: 32.81
20 g - Citra, Type: Pellet, AA: 13.5, Use: Boil for 45 min, IBU: 34.75
10 g - Citra, Type: Pellet, AA: 13.5, Use: Whirlpool for 0 min at 80 °C, IBU: 7.94
40 g - Mosaic, Type: Pellet, AA: 11.7, Use: Dry Hop for 14 days

MASH GUIDELINES:
1) Fly Sparge, Temp: 68 C, Time: 60 min, Amount: 21 L

OTHER INGREDIENTS:
1 each - Whirlfloc, Type: Fining, Use: Boil

YEAST:
Mangrove Jack - US West Coast Yeast

Going to aim for 24L of strike water @ 76.2 to get our 19L pre-boil shenanigans. This one is going to be a success!

1.5kg of torrified wheat? Why not use malted wheat and not risk the weird off flavour you might get with TW?

It does look like a shed load of tw. Otherwise that looks like a very nice light, shiny hop brew
