This stuff was recommended by Rob in place of using Extra light DME, said it would suit the style (German lager) very well and be more suitable than just plain old DME.

My main query is with regards to whether anything else needs tweaked when using this stuff. I did reply to Rob asking the question but he hasn't gotten back to me yet so thought I would see what you guys thought.

The ingredients on the above mentions the following..

Golden brown, unhopped extract with a high concentration, produced from Weyermann® Pilsner Malt and Weyermann® CARAPILS®

My recipe calls for 140g of 2.5L Crystal Malt (carapils).

When using the above liquid malt, should I ditch the carapils addition? I wasn't sure if it was more for creating body when using the extra light DME.

With being a lager I don't want TOO much body, but I would like a head at least :D

I would think the quantity of carapils would be relative to the pilsner extract, it's used at a rate of 5-10% in recipes more often than not - so yeah, ditch it.

i wonder what it's mashed at? that's a big factor with carapils - 65c mash = mostly head retention. 70c mash - sweeeet!

It wasn't mentioned at all in the recipes I seen. I took it from the description that it was just a steep at the boil temps, rather than a proper mash... but maybe I've picked that up wrong. Wanting to do a decent job.... this was my plan...

Bring 2.3L of water to 67 degrees C.
Add 140g of Crystal Malt and 70g of Munich Malt
Steep for 20 minutes.
Strain into large pot
Sparge 2.3L of 65 degrees C water through the spent grain into large pot.
Bring total volume to 7L.
Bring the lot to the boil, then take of the heat to add DME 3kg and 34g of Northern Brewer hops ***
Bring total volume to 11L
Boil for 45 minutes then add 10g of Hallertau Herbrucker hops and 1tsp of Irish Moss
Boil for a further 5 minutes then add 17g of Czech Saaz hops.
Boil for a further 10 minutes then take off the heat and allow to cool for 15 minutes.

So you reckon I can ditch the crystal, swap out the DME for the pils LME and go with the rest?

Cheers :)

you boil for the full 60 mins in that recipe, I would stick with that recipe for sure, looks like what you're after. bear in mind that liquid malt extract is less concentrated than dry so you need a little more!

you can add crystal if you want :thumb: i would be tempted to go for a simple malt profile though so you can see what the extract is like

That's my own recipe/plan based on reading around and pulling the basic ingredients from other recommendations. My plan was to steep the speciality grains to "mash" them, and then boil the whole lot after that.

Yeah my plan was 3kg of DME, so 4kg of the LME will work in just nice... or one barrel to be exact. It's a little more pricey but I just have it in my head that it'll bring a bit more to the table, being a proper pilsner, than using plain old extra light DME will :)

yeah a tub of that stuff should do v nicely on its own, is meant to be the rolls royce of extract,

i have started looking at extract brewing, a nice concept ive stumbled across is adding only a bit of extract to the boil (about a cup) (rest at end to sterilise) at the start and this means get better bittering so can save on the hops or reduce the boil time- need a calc like beersmith though to be accurate
