I am just about to start a batch of WOW amd asked my wife if we had 900gms of sugar in the cupboards.

The reply was - Why are you starting that now when there is 30 bottles of Red in the cellar and 30 bottles of White fermenting. (You know the tone?)

Um ....er .....I was told it was a crime to start another batch after the previous batch had been drunk  - oops - that wasn't the reply she was expecting...............

Couldn't think of a better one off the cuff ............. :?

Anyone give me a better one?

Tell her that if you make more than you can drink then you will never run out and it will help you refrain from drinking young wines. Also doesn't she like wow?

Tell her that wine needs time to mature. As a rough guide, reds will need twice as long as whites. The only way to make sure that happens is for you to make it faster than you can drink it. Even the quick stuff like WOW will benefit tremendously from a couple of months in the bottle.

Let's keep it simple and suppose that you and your wife will get through a gallon a week. You need to be starting off 2 gallons per week. It will still be 12 months before you are drinking 6 month old wine. It might be safer not to mention that you'll be needing a 180 bottle wine rack by then though.

I'll add my signature footnote to this post. There's probably not much left from '09 but most of my 2010 country wines haven't even been bottled yet and I'm now making wines for consumption in 2012-14.

PS: I've started 6 gallons of elderflower this morning which isn't included yet.

Thank you for that :thumb:

I might get away with it now - in fact I was just starting a 5 litre WOW - perhaps I should start a 25 litre one :)

Could be halfway to appeasing the situation - opened a bottle of the Red which is only a week old, and is also the batch I messed up on, but I got the comment that it is 'quite nice' - So I definitely must carry on to try and improve

This is my first attempt - in fact this will be my third attempt at brewing - Complete Newbie.
