I got a brewferm ambiorix kit brew started today. The instructions ask for 1075g sugar. I used 500g light candi sugar and 680g golden syrup, slightly over weight as I guess syrup has some water content. I was expecting an OG of 1.060, but have measured 1.052. I read the hydrometer just after pitching the yeast, so am reluctant to do anything much to the brew. I did make a small dextrose solution and poured into the fv, gave a gentle stir. If I make sugar addition like this after pitching yeast, will I mess up my brew?
 
Never used candi sugar myself maybe someone can help there. What temperature did you take the reading and how long after adding the yeast as these can effect the hydrometer reading.
 
Temperature of the beer was 25 c. I took the sample before pitching yeast, but only measured it just after yeast went in. Silly mistake! Had I realised before pitching, I would have felt a bit more confident adding more sugar. I did it anyway and it's bubbling away 24 hours later, so it seems otherwise healthy
 
If it read 1052 at 25c the true gravity is 1053, providing your hydrometer is calibrated to 20c, most are.
