Got to do my christmas ale today and it went very smoothly :) I brewed just shy of 2 gallons and will add honey on day 3 or so... strength will increase at that point.

Recipe:
2kg Maris Otter
160g White Wheat
160g Crystal Malt (40)
40g Special Roast Malt
20g Roasted Barley

15g Hallertau at 60min
5g Cascade at 10
5g Cascade at 5

1 cinammon stick at 10 mins
10g ginger at 10 mins
30g sweet orange at 10 mins


0.5lb honey on day 2/3 ferment
Mash 154 degrees for 60 mins.

Used the old cool box for this one and batch sparged:

Looking about right:


It's around 1.062 and with the honey coming in a few days I think it may be touching around 8% when done:


It's started going already - 7 hours after going into the cupboard - blow off tube will be needd here:



It smells very orangy and cinnamony :) Hope it turns out well. Probably 3 weeks in primary and then a month in a corny under gas then into bottles and labelled up for a first drink of the evening christmas day :)

I always find it is best to add spices at the end of fermentation in a small muslin bag so that once the required taste is achieved the spices can be taken out. Just putting spices in the boil especially when you have never done it before is risky as once they are in you can not remove the flavour.

Well done though looks a great beer :thumb: :thumb:
 
When it calms down I will try it and if underpowered I'll bag some spices... if overpowered I hope it will calm down before Christmas :)

The initial ferment was an explosion and the honey was added after that so will check it out when things subside a bit.
