Going for this

2.1kg wheat
1.6 Vienna
2kg Maris
80 g carawheat
90 g chocolate [English] :tongue: :tongue:
50 gram cara malt 100 srm

2 stage mash

10 litres 63 C 20 mins

8 litres 71C

Fly sparge

Using safale wheat yeast rehydrated 110 ml pre- boiled water 19C


24 gram fuggle at 90 mins
23 grams hallertauer hersbrucker 15 mins
Zero 13 gram hellertauer
so more bitter than the last wheat i did and darker in colour and using dry Safbrew WB - 06 and late zero hop addition
Just using up me reminents brew :drink:
 
sounds good , will be lovely malty drink . More of a dunkel with the choc . Dunkles are great for christmas , hope all goes to plan :cheers:

Pittsy - I've just got some dark wheat to go in with my next wheaty, would this be used like choc, do you know what the proportions might be?

Sounds awesome. So it's a choc dunkelweizen?What choc are you using? Should play off nicely with the banana and clove notes from the yeast :thumb:

If using dark wheat only use up to 50% (unlike pale which is 70%)
I would also recommend using carawheat too
Something like ,
Dark wheat 45 to 50 %
Carawheat 10 to 15%
pilsners/ pale ale / vienna/ munich/ 39%
choc 1% (optional , for colour only)
ibu 12/15
wlp300
ferment 20/22c (warm more banana which is hidden with darker malts)
 
going for SRM of around 11
to get a red hue to it
using
English chocolate malt for colour only
 
will ferment at 21C
wondering what is the alcohol tolerance on safbrew WB - 06 any one know?
may go for less beer but higher ABV?
 
be careful on increasing strength , it just loses flavour while % taste shines through . I would say 6% is pushing it , seems best at around 5 to 5.5% imo .
 
2 stage mash didn't quite go to plan but 3 stage is happening

Mashed 63C 20 mins
68C 15 min
71C 1 houri :doh:

Update
been at constant 1.008 since friday
5.6% abv

will bottle today
very different yeast character hardly any krausen scum [about 10mm]
just bubbled away till Thursday
very mild fermentation compared to white labs which flooded me fridge a bit
and the aroma is not half that of white labs

all safely bottled up batch primed with 150 grams
had a wee taster
and was pleasantly surprised the amount of banana taste

???is white labs really worth the £9 inc p+p

or is this safbrew WB 06 just a bargain at 3rd of the price?

That's good mate , glad you've got nice clove. Brewing a dunkle tends to hide the banana and clove a fair bit . A bit early to ask but what if any toasted flavour are you getting and also are you getting any sweetness (a touch of caramel ) I'm still trying to get this recipe right .
