Mash temperature perhaps, an accurate reading is important, and there are ways to measure the mash temperature wrong.

I would add dried malt extract, you can add today, or tomorrow, or after the first fermentation has died down if you can't get any before it kicks in.

I was pretty careful with mash temperature - using both glass and digital thermometers. I'm really confident of the 67C going to 65C after 1 hour. But, hey, I guess I could still have ballsed it up!

Ah well, the main issue is rescuing the beer. Malt extract then - could I use Holland and Barrett? I don't have a local home brew shop.

Yes you could use BE. Add 500g and check the OG. Add more if necessary.
 
Had a sneaky taste test from the keg tonight, it should be ready for bottling this week. Will probably prime with 20g sugar and bottle condition for 3-4 weeks at least. That will have given it 7 weeks in total.

Tastes superb already.
 
Bottled this last night. Beer is so forgiving + it tasted just lovely in the sample jar. Two weeks in the warm, 1 in the shed....takes us just up to Christmas day for my first pint!

I'm hopeful mine is going to work out OK. It tasted a bit old peculier-esque yesterday when bottling it. It's still nice though
 
I had a couple more of my oatmeal stouts this last week. One was the last one from the fv and I'd accidentally sucked up a load of trub into the bottle. I'd marked it as the last one (I always do, so I don't judge them to the same standards of the rest of the batch), but hadn't noticed when I took it out of the shed, or when I poured it.

Consequently there was loads of gunk in the glass, and it tasted like marmite. Which i suppose makes sense given what marmite is, and what trub is.

Anyway, it did not make for a refreshing pint. Had another last night though, it was good, despite oddly having no head at all. The first few I cracked had a great head and lacing. This one looked like flat diet coke. Weird.
 
Did a 10 day taster last night, it's nice but I think the fermentation temp was too high, it's more fruity and rich than dry and roasted. Its much nicer than the last sample which is good, but next time I need to control temp better, which means starting my brew fridge project!

But I am my own harshest critic; it is nicely carbonated, hardly any head (will develop over time) but tastes good, no off flavours. A very sessionable stout.

It certainly doesn't taste like 5.5%, so it's quite dangerous! Last night I had an APA (5%) followed by one of these and I was noticeably lighter on my feet afterwards...! It will only improve with time

It sounds too early to judge to me. I bet it will be much different and better in 3-4 weeks.
